The tea confectionery kaiseki at SABI Gosho Minami is created by Kyoto-based confectionery artist Sayoko Sugiyama of Okashimaru.
Looking back through the history of confectionery and the sense of time embedded within it, she draws inspiration from the works of T.T founder Taiga Takahashi and from T.T’s approach to making, translating them into contemporary confectionery.
Utsuroi | Kohakutō
Inspired by Infinite Tower by Taiga Takahashi and its expression of time.
As it is enjoyed, the flavours gradually shift, evoking the passage between seasons.

Ai no Aya | Kinton
Inspired by T.T denim, woven from natural warp threads and indigo weft threads.
Banana bean paste is wrapped in yam and white-bean paste, layered like interwoven threads.
Awai | Kuzu-yaki
Inspired by 16th–17th century tea gatherings, when the boundary between cuisine and confectionery was less distinct.
A savoury kuzu confection exploring the space between sweetness and saltiness.
Su Na Fu | Monaka
A light monaka combining sweet azuki bean paste with maitake mushroom cream.
A delicate woodland aroma unfolds within the gentle sweetness of the beans.
Shirotae | Seppē-mochi
Soft gyūhi enriched with meringue, shaped to evoke the gentle folds of draped cloth.
Filled with caramelised white-bean paste.
